Door three: know the farmer
I'm not a farmer. I'm a guy who got sick of being sick.
I did everything you're supposed to do, and I still felt bad. When I pulled on that thread the first thing that came loose was what I was eating — not because of a study, but because I tried to find out what was in it and couldn't.
So I started raising it myself. That's the whole story. No hundred-year heritage, and I'm not going to invent one. Ask me anything and you'll get a real answer, because there's a person on the other end of this rather than a marketing department.
Raised the slow way
Open pasture, deep bedding, and as long as it takes.
They root, they wallow, they sleep in hay under shelter when they want to. Nothing about that is efficient, which is exactly why the meat is different and why there isn't much of it.
When a batch is gone it's gone until the next hogs are ready. That's not a marketing tactic — I just can't make more on demand.
And this is Ginger
The horse who was too big for her job.
Clydesdales were bred to pull, for work that mostly doesn't exist anymore. Ginger is the size of a kitchen appliance and moves like she knows it. Too big for most of what people want a horse for, too gentle for the rest — by the standards of the industry that produced her, she's a horse without a job.
She's also the reason people stop at the fence. Which is roughly the same problem I had: built for one version of a life, quietly no good at it, and the fix wasn't trying harder.
Where the money goes
A hog costs about $685 to raise and have processed, and yields around 145 pounds of packaged meat. That's roughly $4.70 a pound before anyone's been paid. Shipping a frozen box costs us $18 to $75 depending on its weight and how far it travels, plus $14 to $22 in the box, the insulated liner and the ice. On the bundles we absorb all of that. It's why a pound of this costs what it costs, and why the grocery store's $3.99 pork is a different thing than this is.

How much is shipping?
Every bundle ships free. If you're building your own box it's free over $149, $19.95 from $75 to $149, and $24.95 under $75. Frozen freight is the real cost here — the box, the liner and the ice go out whether you order one pack or ten, so small orders carry more of it.
What if I'm not home?
The packing holds well past the delivery window, but bring it in the day it lands. That's the one thing we need from you.
How long does it keep?
Vacuum-sealed and frozen, a year easily. Most people work through a box in six to ten weeks.
